Chef Dickerson’s American-themed feasts and his troupe of merry culinarians promise a little something for everyone this Christmas

THE festive month of December always brings about cheerful memories of pretty mistletoe and wreaths, Christmas carols and of course magnificent, glorious food.
All geared up to celebrate the magic of the holidays is The Four Seasons Hotel Kuala Lumpur (KL), with different offerings for its food and beverage outlets.
For this year’s Christmas, the hotel will come together for its American-themed feasts created by chef Junious Dickerson and his troupe of merry culinarians, promising a little something for everyone.
Chef Dickerson, originally from the US, said he will prepare dishes close to his heart and ones that remind him of family and the spirit of Christmas.
“My work has taken me all over the world, giving me the opportunity to enjoy Christmas delicacies in many different cultures. Now, I’m recreating these recipes to share them with our guests in KL,” he said in a get together with the media in KL recently.
Not to be left out, children specifically will have the chance to enjoy many fun activities and get creative at the Kid’s Corner.
Christmas Dining at Curate
On Christmas Eve and Christmas Day, an extravagant feast will be prepared by chef Dickerson, starting with a welcome glass of mulled wine.
Guests will also be treated to a choir of local carollers to add in some festive cheers and to set the mood right for a sing-along experience.
The Christmas buffet will offer holiday specialities from all around the world, made with traditional holiday ingredients like chestnut, turkey, cinnamon and Brussels sprout.
Among the special dishes created for this festive event are chef’s roasted turkey and black truffles, and baked flounder stuffed with crab imperial.
Price for Christmas Eve dinner is set at RM298 nett, while Christmas Day brunch is at RM268. Children aged between five and 12 will eat at half price.
Christmas Day Tea at The Lounge
The Lounge has always been famous for its afternoon tea delights and Christmas Day this year will be even more special.
Guests will have the chance to taste exquisite goodies like chestnuts, gingerbread and eggnog, bringing together both sweet and savoury dishes high on glamour and flavour for its guests.
Reimagined by chef Dickerson, some of the special dishes include beetroot cured salmon, chestnut turkey salad, eggnog creme brulee and yule logs.
The whole array of delicacies will be complemented by The Lounge’s signature tea, priced at RM198 nett.
New Year’s Eve
Most Malaysians will undoubtedly be looking for the best foods combined with the best views to ring in 2020, and Four Seasons KL is determined to provide both. High-end Cantonese-inspired restaurant, Yun House, will have a signature menu for the final night of the year, uniquely created by chef Jimmy Wong and his team.
Guests will have the opportunity to taste tantalising creations like braised five head abalone with fish maw — a one of a kind dish made with abalone flown in from South Africa and braised in a secret sauce for seven hours.
According to Four Seasons, guests looking to have a more private and intimate dinner space will be able to book any one of its dining rooms.
The New Year’s Eve set dinner will be priced at RM688 nett and RM1,088 nett.
It’s all-day dining restaurant, Curate, will also have a spectacular international spread on this night, ending with an even better view of fireworks.
The buffet spread will include new dishes and favourites from 2019, embarking on a flavour-infused journey globally.
Chef Dickerson said some of the dishes not to be missed include classic roasted crown of turkey, locally inspired barramundi ikan bakar in banana leaf, German lebkuchen gingerbread and Rajasthani’s lamb lal-mass simmered with red Kashmiri chillies.
Epicures will also have options of T’Lur local caviar, chilled Boston lobster, artisanal cheeses and premium chocolates.
The buffet dinner is priced at RM388 nett. For the young at heart who wants to ring in the New Year with some bubbly and music, Bar Trigona will offer bespoke cocktails crafted by superior mixologists, while guests savour the sweeping views of the KL skyline.
Two of its signature drinks not too be missed include the Winter Sparkle, a mix of herbal bitter Becherovka mixed with Borneo honey, lemon juice and Prosecco; and the Remynt Wonderland, a delightful concoction of Remy Martin VSOP, peppermint tea, Pimento Dram (also known as Jamaica pepper), finished with a spritz of grapefruit juice. For unlimited pouring of wine, beer, cocktails and snacks, the price is RM388 nett, while champagne can be added in for only RM688 nett.
New Year’s Day
Commemorating the first day of the year at Four Seasons will definitely be a special one, whether at Curate or The Lounge.
Curate’s menu will feature a tantalising spread of fresh coconuts and eggnog, alongside international delicacies from the US, Spain, Australia, India, China and of course the unforgettable local cuisine. Brunch will be priced at RM210 nett.
For those wanting a lighter, healthier start to the year, The Lounge will present a luxurious afternoon tea consisting of finely cut sandwiches, freshly-baked scones and pastries.
Chef Dickerson will also feature some of his special creations symbolising prosperity and joy such as sturgeon caviar, duck prosciutto and cassis creme brulee. Guests can enjoy the spread for just RM198 nett.
Meanwhile, the Four Seasons team said while some families may want to head out this season, others may want to stay in and enjoy the comfort of having everyone together.
Guests can also pre-order its “Festive To Go” offering, where the same Christmas dishes will be made in-house and delivered to homes around the Klang Valley.
This offering will be available all through the month of December.
